Teff Parfait
Serves: 2
Chia pudding layer
  • ¼ cup chia seeds
  • ½ cup vegan yogurt
  • ½ a cup almond milk
  • 1 tablespoon maple syrup
Teff Porridge
  • ½ cup Maskal Teff® brown grain
  • 1 cup filtered water
  • 1½ cups almond milk
  • 1 large banana, mashed
  • 1 teaspoon of maca powder
  • 1 tablespoon ground cinnamon
  • Pinch of salt
  1. Mix all the pudding ingredients together in a bowl until well combined. Cover and let sit in the fridge for at least 1 hour to gel (or overnight).
  2. Add the teff grain, water and milk to a pot and heat over a medium heat. Mix well.
  3. Once simmering turn the heat down to low. Cook for 10-15 minutes.
  4. Mix in mashed banana, maca, cinnamon and salt.
  5. Cook an additional 15 minutes or until the porridge thickens.
  6. Layer with chia pudding and top with your favorites.
