Baking & Cooking
Use in traditional injera or as a 1:1 substitute for wheat flour in no-rise baked goods like pancakes, waffles, cookies, banana bread, and more. Teff flour can be used on its own or blended with other flours.
Simmer like quinoa or rice—use 1 cup teff grain to 3 cups water or broth. Cook until tender and use as a hearty layer in porridge, grain bowls, and other wholesome dishes.
Brown teff has an earthy/nutty flavor, while ivory teff has a subtle, slightly sweet flavor. Both are whole grain and remain unrefined throughout milling.
Farming & Growing Practices
No. Glyphosate is not used in growing or processing teff—Round‑Up kills teff.
Maskal Teff prohibits off‑label pesticide use, desiccants, fungicides, and fumigants during growing, harvesting, storage, or processing. We use integrated pest management practices. Some conventionally grown teff may be treated with herbicide early in growth to control weeds, but our contracts strictly prohibit desiccants such as glyphosate (Round-Up).
Fertilizer use varies by soil composition, crop rotation, and cover cropping. Standard fertilizers may include nitrogen, phosphorus, potassium, and micronutrients. Teff typically requires less fertilizer than common commodity crops.
Our farmers may also grow potatoes, alfalfa, wheat, barley, beets, onions, beans, and corn.
Food Safety & Quality
Yes. Our teff is naturally 100% gluten‑free and processed in a teff-only, dedicated gluten‑free facility. Each lot is verified by a third‑party lab to contain 5 ppm or less of gluten, exceeding FDA requirements.
We work closely with farmers to minimize any on‑farm contamination risk. We operate a teff‑only, gluten‑free facility and test each crop with a third‑party lab.
Maskal Teff has a single processing line dedicated exclusively to teff. None of the following allergens or derivatives are present: peanut, tree nut, milk, egg, soy, fish, shellfish, wheat, seeds, sulfites, diacetyl, non‑wheat gluten, mollusk, artificial colors, celery, MSG, corn, HVP, preservatives, or yeast. All products are produced in accordance with good manufacturing practices and FDA regulations.

Yes. Our certification is granted annually by OK Kosher after thorough inspection of our processes.

Organic teff is grown without synthetic pesticides, herbicides, fungicides, or fertilizers, and is certified organic by the USDA. Conventional teff may use limited inputs such as nitrogen, phosphorus, potassium, and micronutrients, and some herbicides can be applied early in growth to manage weeds. Maskal Teff prohibits the use of glyphosate (Round‑Up) and desiccants in both conventional and organic systems.
Shelf Life & Storage
Teff has a shelf life of up to 24 months (about 2 years) under recommended storage conditions.
To maintain freshness, store teff flour or grain in a cool, dry place. Refrigeration or freezing is recommended if possible. Avoid areas with moisture, insects, or rodents (such as garages or storage units).
