Ingredients

  • 2 cups Maskal Teff flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 2 large eggs
  • 1 ½ cups milk of choice
  • 2 T. butter, melted

Directions

  1. Combine dry ingredients in a large bowl and set aside.
  2. In a separate bowl, combine lightly beaten eggs, milk, and melted butter.
  3. Whisk the dry ingredients into the wet ingredients, being careful not to overmix.
  4. Ladle batter onto a griddle or pan, flipping when bubbles begin to form. Cook until golden on both sides.
  5. Garnish with fresh berries and maple syrup.
