Ingredients
2.5 cups Maskal Teff flour
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 3 large eggs
- 1 tbsp vanilla extract
- 1 tsp xanthan gum
- 1 tbsp cornstarch
- 1 tsp baking soda
- 1 tsp salt
- 1 cup dark chocolate chunks
- 1 cup semi-sweet chocolate chips
Directions
- Add softened butter and sugars to a stand mixer or a bowl and cream until light and fluffy.
- Add eggs and vanilla extract, mix on low until combined.
- In a separate bowl, combine teff flour, xanthan gum, cornstarch, baking soda, and salt. Whisk to combine.
Add dry ingredients to the wet ingredients and combine on until dough starts to form. Add chocolate and mix until combined.
- Chill dough for at least 30 minutes, then scoop onto cookie sheet. Rest for at least 30 minutes in a freezer before baking.
- Preheat oven to 350°F and bake for 15-18 minutes. Let rest for 1 minute to allow them to set before moving to a cooling rack.
