One of Ethiopia's most beloved dishes, misir wat combines red lentils with berbere for a rich, deeply flavored stew that's perfect for scooping up with injera.
Ingredients
- 1½ cups red lentils, rinsed
- 2 large red onions, finely chopped
- 4 tbsp niter kibbeh (or light cooking oil)
- 3 tbsp berbere
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 4 cups water
Directions
- Cook onions in a dry pot over medium-low heat, stirring frequently, until softened and lightly caramelized.
- Add niter kibbeh (or light cooking oil) and berbere. Cook for 2-3 minutes until fragrant.
- Stir in garlic and ginger.
- Add lentils and water. Bring to a simmer.
- Cook for 25-30 minutes, stirring occasionally, until the lentils break down into a thick stew.
- Add additional water if needed to reach your desired consistency. Serve hot with injera.
