Ingredients
- 1 ¾ cup Maskal Teff flour
- 2 ½ - 3 ripe bananas
- ⅓ cup unsalted butter (melted)
- ¾ cup sugar
- 2 large eggs
- 1 tbsp vanilla extract
- ½ tsp baking soda
- 1 tsp baking powder
- Pinch of salt
- ½ – 1 tbsp cinnamon to taste
- 3 tbsp milk of choice
Directions
- In a large mixing bowl, mash bananas then stir in melted butter. Add sugar, eggs, and vanilla. Mix until well combined.
- Add baking soda, baking powder, salt, cinnamon, Maskal Teff flour, and milk of choice. Stir until just combined, being careful not to overmix.
- Cover bowl and let sit for 35 minutes. While it sits, preheat oven to 325°F.
- Bake for 55 minutes or until a toothpick inserted comes out clean.
- Top with a dollop of fresh made whipped cream and walnuts if you’d like. Enjoy!
