1 ¾ cup Maskal Teff flour
2 ½ - 3 ripe bananas
⅓ cup unsalted butter (melted)
1 tbsp vanilla extract
½ tsp baking soda
1 tsp baking powder
Pinch of salt
½ – 1 tbsp cinnamon to taste
3 tbsp milk of choice
In a large mixing bowl, mash bananas then stir in melted butter. Add sugar, eggs, and vanilla. Mix until well combined.
Add baking soda, baking powder, salt, cinnamon, Maskal Teff flour, and milk of choice. Stir until just combined, being careful not to overmix.
Cover bowl and let sit for 35 minutes. While it sits, preheat oven to 325°F.
Bake for 55 minutes or until a toothpick inserted comes out clean.
Top with a dollop of fresh made whipped cream and walnuts if you’d like. Enjoy!
