ETHIOPIAN FOOD

Ethiopian cuisine is one of the world’s great food traditions—deeply communal, boldly seasoned, and rooted in thousands of years of agricultural and cultural tradition.

INJERA እንጀራ

If you’ve ever eaten Ethiopian food, injera is likely the first thing you remember. The soft, spongy, sour flatbread is made from fermented teff flour. Naturally occurring yeasts and bacteria on the grain ferment the batter over several days, creating acidity, aroma, and bubbles. When poured onto a hot mitad, steam and fermentation gases form the signature “eyes”—the tiny, evenly spaced holes that give injera its texture and ability to soak up stews and sauces. Good injera has abundant eyes, a balanced sourness, and a soft, elastic feel.

Injera is typically made ahead of the meal and served at room temperature. One large piece becomes the edible base for the dishes placed on top, while additional rolls of injera are used to scoop and eat. By the end of the meal, the base injera—now infused with the flavors of the dishes—is eaten as well.

Core Preperation Methods

Ethiopian meals are built around a few key categories of dishes.

WOT (ወጥ)

Slow‑cooked stews, often richly spiced; can be made with meat, legumes, or vegetables.


TIBS (ጥብስ)

Sautéed or grilled pieces of meat, ranging from mild to spicy.

COMMON INGREDIENTS

Doro (ዶሮ) - Chicken

Sega (ሥጋ) - beef

Beg (በግ) - lamb

Asa (ዓሣ) - fish
Kik (ክክ) - split peas

Misr (ምስር) - lentils

Gomen (ጎመን) - greens

Atkilt (አትክልት) - mixed vegetables
dinich (ድንች) – potato

tibs (ጥብስ) – grilled meat

SHIRO WOT (ሽሮ ወጥ) - chickpea stew

Spices & Seasonings

Ethiopian cuisine is known for its layered, aromatic spice blends.

Berbere (በርበሬ)

The iconic red spice blend made from chili peppers, coriander, ginger, garlic, Ethiopian basil (besobela) and more.


Alicha (አሊቻ)

Mild yellow seasoning used in gentler stews.


Mitmita (ሚጥሚጣ)

A hotter, orange‑red blend of chilis, cardamom, cloves, and salt.


Kay (ቀይ)

“Red,” used to describe dishes colored and flavored by berbere.

Many spices central to Ethiopian cooking—besobela, koseret, korarima, ajwain, nigella, fenugreek, gesho—may be unfamiliar to American cooks but are essential to the cuisine’s depth of flavor.

Talla (ጠላ)

A traditional Ethiopian beer brewed from grains such as teff and sorghum, often smoky and low in alcohol.


Tej (ጠጅ)

A honey wine made with honey, water, and gesho, served at celebrations and gatherings.


Bunna (ቡና)

Ethiopian coffee, often prepared in a ceremonial setting.
