These are so delicious you’d never imagine that they are vegan, wheat free, gluten free and naturally sweetened. They’ll definitely give you the energy to power through your day! Made with teff flour. Teff provides essential amino acids and 7 grams of protein per serving, making these bars a nutritious and delicious snack or dessert. The nutty flavor of teff enhances the taste of the bananas or pumpkin, creating a perfect treat for any time of year.

Instructions

  1. Preheat oven to 350°F.
  2. Mix all dry ingredients including spices, raw sugar, and orange zest (if using) in stand mixer with paddle attachment, or by hand.
  3. Cut in chunks of the vegan butter.
  4. Add nuts or pumpkin seeds and dried cranberries.
  5. Add maple syrup and banana or pumpkin puree. Mix until it all comes together.
  6. Press mixture into a 9×9 pan. Bake 25-30 Minutes.
  7. Cool. Cut into bars.

Ingredients

  • ½ cup flax meal
  • 1 cup rice flour
  • 1 cup Maskal Teff™ flour
  • 2 Tbsp Maskal Teff™ grain (optional)
  • 1 cup oats
  • 2 Tbsp cornstarch
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 Tbsp xanthan gum
  • ½ tsp salt
  • 1 Tbsp cinnamon
  • ¾ cup raw sugar
  • 1 cup vegan butter or margarine (chilled)
  • ½ cup maple syrup
  • 2 bananas pureed or 1 cup pumpkin puree

If making banana bars add

  • 1 cup walnuts

If making pumpkin bars add

  • ½ cup pumpkin seeds
  • ½ cup dried cranberries
  • 1 tsp cloves
  • 1 tsp ginger
  • ½ tsp nutmeg
  • 1 orange zested
