A black bean and teff brownie is a unique and nutritious take on a traditional chocolate treat. The gluten-free teff flour adds a nutty flavor and hearty texture to the brownie, while black beans provide protein and a fudgy texture.
Preheat oven to 350F
Place all ingredients EXCEPT chocolate chips & nuts of choice in a food processor – puree until smooth. Fold in chocolate chips & nuts if you desire. (I like to save some of both of these to throw on top). Do not blend!
Place in a greased 8X8 baking dish, cook for 15- 18 minutes. Let cool before cutting.
If the brownies seem undercooked – no worries. Place in the fridge overnight and they will firm right up.
1 ½ cups cooked black beans
¾ cup teff flour
⅓ cup pureed beets
⅓ cup maple syrup
⅓ cup cocoa powder
¼ cup coconut oil or melted butter
2 tsp vanilla bean
½ tsp baking powder
¼ tsp sea salt
1 cup chocolate chips
Nuts of choice if you so desire
