Broiled Cherry Teff Parfait

Serves: 2 parfaits
Ingredients
- 12 or so cherries, de-stemmed and pitted
- 1 teaspoon extra virgin olive oil
- Sea salt
- Freshly ground black pepper
- ¼ cup Maskal Teff® ivory grain
- ¼ cup rolled oats
- 1 cup cherry juice
- ½ teaspoon vanilla extract
- ½ teaspoon cardamom
- ½ cup plain yogurt
- Honey or maple syrup, optional
- ¼ cup chopped toasted pistachio nuts
Instructions
- Set the oven to high broil.
- Place the cherries on a baking sheet and toss them with the olive oil and a pinch of both salt and pepper, then place on the top rack of the oven.
- Cook for 5-6 minutes until the cherries start to char in spots, shaking the baking sheet after a few minutes for even cooking. Remove from the oven and set aside.
- Place the teff grain, oats, cherry juice, vanilla, cardamom and a pinch of salt in a small pot.
- Bring to a boil over medium-high heat then lower the heat and simmer, stirring occasionally until the liquid is absorbed and the oats are soft, around 15-20 minutes.
- To assemble: For each parfait, spoon a layer of the teff and oats into the bottom of a jar or dish. Spoon a dollop of yogurt on top, then the cherries, and then a drizzle of sweetener if desired. Top with pistachio nuts.
