Broiled Cherry Teff Parfait

Ingredients
  • 12 or so cherries, de-stemmed and pitted
  • 1 teaspoon extra virgin olive oil
  • Sea salt
  • Freshly ground black pepper
  • ¼ cup Maskal Teff® ivory grain
  • ¼ cup rolled oats
  • 1 cup cherry juice
  • ½ teaspoon vanilla extract
  • ½ teaspoon cardamom
  • ½ cup plain yogurt
  • Honey or maple syrup, optional
  • ¼ cup chopped toasted pistachio nuts
Instructions
  1. Set the oven to high broil.
  2. Place the cherries on a baking sheet and toss them with the olive oil and a pinch of both salt and pepper, then place on the top rack of the oven.
  3. Cook for 5-6 minutes until the cherries start to char in spots, shaking the baking sheet after a few minutes for even cooking. Remove from the oven and set aside.
  4. Place the teff grain, oats, cherry juice, vanilla, cardamom and a pinch of salt in a small pot.
  5. Bring to a boil over medium-high heat then lower the heat and simmer, stirring occasionally until the liquid is absorbed and the oats are soft, around 15-20 minutes.
  6. To assemble: For each parfait, spoon a layer of the teff and oats into the bottom of a jar or dish. Spoon a dollop of yogurt on top, then the cherries, and then a drizzle of sweetener if desired. Top with pistachio nuts.
