Gluten-Free Spicy Chocolate Pudding

This sweet chocolate pudding is warming, rich, and filling but not too sweet. In fact, there’s no added sweetener (though feel free to mix in a bit of honey or maple syrup if you prefer a sweeter dessert). This recipe uses teff, a gluten-free grain with a delicious nutty flavor.

Instructions

  1. Toast teff over medium heat in a heavy saucepan. Stir constantly until it starts to pop and become fragrant then stir in the cocoa or cacao powder, cinnamon, salt, and cayenne pepper. Whisk to break up any lumps.
  2. Slowly whisk in the milk and bring to a gentle boil. Reduce the heat and simmer, stirring occasionally and scraping the sides and bottom of the pot, for about 20-25 minutes until the milk is absorbed and the teff has the consistency of pudding or porridge.
  3. Divide evenly among bowls and top with your favorite toppings.

For dessert, top with favorite toppings – whipped cream, cacao nibs, shaved chocolate, chocolate chips.

  • 1 cup Maskal Teff grain, ivory or brown
  • 1/4 cup cocoa or cacao powder
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cayenne pepper
  • 3 cups dairy or dairy-free milk
  • Cacao nibs, chocolate chips or shavings, whipped cream etc. for serving
