Teff Meatballs
Pair these Teff meatballs with some spaghetti (gluten free or otherwise) and you have a new day approach to a classic favorite.

Ingredients
- 2 cups of black beans (strained and rinsed)
- ½ a cup of Maskal Teff™ flour
- 1 Tbsp of garlic powder
- 1 Tbsp of Italian seasoning
- ¼ of a cup of nutritional yeast
- 1 tsp of smoked paprika
- ½ a tsp of salt
- ½ a cup of finely chopped onions
- 2 tsp of tomato paste
- ¼ of a cup of chopped parsley
Instructions
- Into a large bowl or food processor add all your ingredients and mash/process until desired consistency.
- Form meat balls with a ice cream scooper or however you'd like.
- Fry on a non stick pan with some oil until crispy brown. 10-15 cooking time.
