Teff Meatballs
Pair these Teff meatballs with some spaghetti (gluten free or otherwise) and you have a new day approach to a classic favorite.
  • 2 cups of black beans (strained and rinsed)
  • ½ a cup of Maskal Teff™ flour
  • 1 Tbsp of garlic powder
  • 1 Tbsp of Italian seasoning
  • ¼ of a cup of nutritional yeast
  • 1 tsp of smoked paprika
  • ½ a tsp of salt
  • ½ a cup of finely chopped onions
  • 2 tsp of tomato paste
  • ¼ of a cup of chopped parsley
  1. Into a large bowl or food processor add all your ingredients and mash/process until desired consistency.
  2. Form meat balls with a ice cream scooper or however you'd like.
  3. Fry on a non stick pan with some oil until crispy brown. 10-15 cooking time.
