Teff Porridge with Goji Berries, Dates and Figs

This warming, sweet, nutrient rich porridge is quick and easy to make. Together teff, goji berries, dates, and figs offer plenty of fiber, Vitamin C, B Vitamins, iron, calcium, magnesium, and potassium among other minerals and vitamins. Serve this comforting porridge to warm up and power through your day.

Instructions

  1. Place all the ingredients in a 2-quart saucepan, adding the water last.
  2. Cover and bring to a boil over medium heat. Reduce the heat to low and simmer 10 minutes, or until the teff is tender and the mixture begins to thicken.
  3. Turn off the heat and let sit for 5 minutes to absorb the remaining liquid.
  4. Serve hot, either as is or topped with your favorite milk, yogurt, or maple syrup.

Ingredients

  • 1/2 cup organic rolled oats
  • 1/4 cup Maskal Teff® brown or ivory grain
  • 1/4 cup pitted organic dates, chopped
  • 1/4 cup pitted organic dried figs, chopped
  • 1/4 cup organic goji berries
  • 2 tablespoons organic unsweetened shredded coconut
  • 1 teaspoon organic ground cinnamon
  • Pinch sea salt
  • 2 1/2 cups water
