This warming, sweet, nutrient rich porridge is quick and easy to make. Together teff, goji berries, dates, and figs offer plenty of fiber, Vitamin C, B Vitamins, iron, calcium, magnesium, and potassium among other minerals and vitamins. Serve this comforting porridge to warm up and power through your day.
Place all the ingredients in a 2-quart saucepan, adding the water last.
Cover and bring to a boil over medium heat. Reduce the heat to low and simmer 10 minutes, or until the teff is tender and the mixture begins to thicken.
Turn off the heat and let sit for 5 minutes to absorb the remaining liquid.
Serve hot, either as is or topped with your favorite milk, yogurt, or maple syrup.
