Injera is more than just a staple of Ethiopian cuisine—it’s a daily tradition, a shared centerpiece, and a reflection of centuries-old techniques passed from generation to generation. Before preparing it yourself, take time to understand the essential ingredients and their role in this time-honored process. True injera is made with 100% teff flour, fermented over several days to develop its signature tang and texture. With care and patience, you’ll be carrying on a practice that’s as much about connection and heritage as it is about cooking.
