This Almond Teff Shortbread cookie recipe was developed by local gal Laura Shoemaker of the Flying M Coffee Garage so you know they are going to be perfect with a cup of java.

Instructions

  1. Cream butter and sugar in mixer. Add egg and almond extract. Cream and scrape sides with spatula.
  2. Grind sliced almonds with cornstarch in a food processor. Mix with remaining dry ingredients.
  3. Add dry ingredients to butter mixture. Mix until dough comes together.
  4. Wrap in plastic wrap and chill for at least 2 hours.
  5. Roll out chilled dough 1/4 inch thick on teff floured surface.
  6. Use cookie cutters to cut out.
  7. Bake at 350°F for 10 minutes.

  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon almond extract
  • 2 cups sliced almonds
  • 1 tablespoon cornstarch
  • 1 1/4 cups Maskal Teff® flour
  • 3/4 teaspoon kosher salt
  • 1 teaspoon xanthan gum
