Almond Teff Shortbread
This Almond Teff Shortbread cookie recipe was developed by local gal Laura Shoemaker of the Flying M Coffee Garage so you know they are going to be perfect with a cup of java.

Ingredients
- 1 cup butter, softened
- ½ cup sugar
- 1 egg
- ½ teaspoon almond extract
- 2 cups sliced almonds
- 1 tablespoon cornstarch
- 1¼ cups Maskal Teff® flour
- ¾ teaspoon kosher salt
- 1 teaspoon xanthan gum
Instructions
- Cream butter and sugar in mixer. Add egg and almond extract. Cream and scrape sides with spatula.
- Grind sliced almonds with cornstarch in a food processor. Mix with remaining dry ingredients.
- Add dry ingredients to butter mixture. Mix until dough comes together.
- Wrap in plastic wrap and chill for at least 2 hours.
- Roll out chilled dough ¼ inch thick on teff floured surface.
- Use cookie cutters to cut out.
- Bake at 350°F for 10 minutes.
