Enriched with the highly nutritious ancient Ethiopian grain, these seeded Teff crackers are as simple to make as they are delicious and healthy! Be sure to include them in your awesome cheese boards, vegan or otherwise. Or simply snack on them to quickly pause your 4’o clock hunger pangs.

Instructions

  1. Preheat oven to 425°F/220°C.
  2. In a bowl, combine the flours, baking powder, salt, oil, nuts, and seeds. Mix together until clumpy.
  3. Adding a little water at a time, knead into a soft dough.
  4. Place the dough between two sheets of parchment and roll out as thin as you can. The thinner the better.
  5. Using cookie cutters, cut into shapes (or you can use a knife and slice into squares).
  6. Transfer to a medium baking tray (you may need to bake in two batches) and bake in the preheated oven for 8-9 minutes.
  7. Cool on a baking rack and store in an airtight container for up to 2 weeks.
If pairing with cheese, use ¾ teaspoon salt. If snacking plain, 1 teaspoon salt.

If you don’t have three kinds of sesame seeds just use 1½ tablespoons of whatever kind you have.

Ingredients

  • ½ cup Maskal Teff® brown flour
  • ½ cup all-purpose flour (substitute with Bob’s red mill 1:1 gluten-free baking flour)
  • 1½ teaspoon baking powder
  • ¾ -1 teaspoon salt*
  • 1 tablespoon olive oil
  • ½ tablespoon pine nuts
  • ½ tablespoon white sesame seeds
  • ½ tablespoon brown sesame seeds
  • ½ tablespoon black sesame seeds
  • ⅓ cup + 1 teaspoon water
