Instructions

  1. Preheat the oven to 350°F.
  2. Prepare a 9 x 13 cake pan by lightly greasing and tapping a small amount of flour around to coat the bottom and edges of pan.
  3. In a medium sauce pan combine the butter, whole milk, blackstrap molasses and honey. Place pan on medium low heat. Stir until butter is melted. Let liquid cool slightly then combine with applesauce and lightly beaten eggs.
  4. Whisk all the dry ingredients together in a large bowl.
  5. Pour the wet ingredients into the bowl and use a spatula to fold mixture just until it comes together.
  6. Pour batter into prepared pan. Bake for 35-40 minutes.

  • 1¼ cup butter
  • 1 cup whole milk
  • 1 cup blackstrap molasses
  • ½ cup honey
  • 1 cup unsweetened applesauce
  • 4 eggs
  • 2 cups whole wheat pastry flour
  • 1 cup Maskal Teff brown flour
  • 1 Tbsp baking soda
  • 1 Tbsp baking powder
  • 2 Tbsp plus 1 tsp ground ginger
  • 1 Tbsp ground cinnamon
  • ¾ tsp ground cloves
  • ¾ tsp ground nutmeg
  • ¾ tsp ground allspice
  • 1 tsp salt
