Banana Nut Waffles

Serves: 5 medium sized waffles
Ingredients
- 1½ cups of almond flour
- 1 cup of Maskal Teff flour, brown or ivory
- 1½ cups of almond milk
- 2 small bananas, about 1 cups worth
- 2 tsp of vanilla extract
- ⅓ of a cup of crushed walnuts
Instructions
- Place flour through vanilla in a high speed blender and mix thoroughly.
- Stir in walnuts.
- Heat a waffle iron according to the manufacturer's instructions. When a drop of water thrown on the waffle iron sizzles, spoon on enough batter to cover ¾ of the surface.
- Close the lid and bake until the waffle is golden brown and the edges are crisp. Since teff contains no gluten, the waffles will be fragile, so remove them gently by prying up one corner with a fork and then sliding a spatula underneath to lift them up.
- Blend all ingredients into a high speed blender (then add the nuts and mix well) and cook on a waffle maker.
